2005 Aprilskloof Red-Red Wine Pinotage , Zinfandel, Cabernet Sauvignon, Merlot, Grenaché, Shiraz, Viognier, Carignan The bushvine vineyards are west facing and the Grenache vineyard is north facing, all with maximum sunshine exposure. The soil is of medium depth alluvial decomposed sandstone, yielding around 5 tons/ha from 3350 vines/ha. All grapes are small berried and the bunches are small for its cultivars. The grapes are hand picked at full ripeness, cooled to 1.5 ºC for 24 hours and then hand selected, destemmed and crushed. Cold maceration follows for up to 72 hours, in open top concrete fermenters. All cultivars are kept separately until blending later. Alcoholic fermentation is induced by the addition of selected yeast. The fermentation temperature is controlled and the mash is gently punched down frequently and no post alcoholic extraction is desirable. The mash is then pressed, and transferred to concrete tanks for natural or induced malolactic fermentation. After completion and biological stabilising, the wine is transferred to new and used French and American oak barrels for 12 months, racked 2-3 times during that period. The wines are bottled unfiltered and without fining. This unique cuvee is described to be full of vitality with juicy ripe fruits and is designed for a wide appeal. 2007 Aprilskloof Sauvignon Blanc This south-east facing dry land bush vine vineyard is situated on a poor Glen Rosa soil yielding 5 tons from 3400 vines per hectare. The grapes are hand harvested and selected optimally ripe at 22 Brix. The bunches are cooled in a cold room to 2 ºC prior to hand selecting only the best berries. The selected grapes are destemmed and crushed, and pressed. After settling, the juice is transferred to a stainless steel tank and cold fermented for 3-4 weeks under controlled conditions. After completion the wine is biologically stabilised and kept on the lease until filtration and bottling two months later. A zesty, crisp and light Sauvignon Blanc with fresh aromas, full fruit flavour and minerality, typical of deep granite and sandstone soil. Enjoy now and serve chilled with poultry, pasta or fish.
